SAFFRON RICE

INGREDIENTS
1/8 tsp saffron threads
1 tbsp ghee
1 cup basmati rice, rinsed
2 cups water or veggie broth
Salt & pepper to taste
DIRECTIONS
Pinch the saffron threads between your fingers (or slightly grind in mortar and pestle) and add to a small bowl with 1/4 cup hot water.
Allow the threads to steep in the hot water for 5 minutes.
Heat the ghee in a small pot. Add the rice & saffron threads (plus the water it was steeping in) and sauté for 1-2 minutes.
Add 2 cups water or veggie broth. Bring to boil, then reduce to a simmer.
Cover and simmer until rice is cooked (about 20 minutes). Add salt & pepper to taste.
Notes
Saffron is a very uplifting and energizing herb. So this is great to have when you are feeling down, burnt-out or having low energy.
Good for all doshas, just in moderation for kapha as rice in general is heavy.
