SAFFRON RICE

3 servings, 20 minutes


INGREDIENTS

  • 1/8 tsp saffron threads

  • 1 tbsp ghee

  • 1 cup basmati rice, rinsed

  • 2 cups water or veggie broth

  • Salt & pepper to taste


DIRECTIONS

  1. Pinch the saffron threads between your fingers (or slightly grind in mortar and pestle) and add to a small bowl with 1/4 cup hot water.

  2. Allow the threads to steep in the hot water for 5 minutes.

  3. Heat the ghee in a small pot. Add the rice & saffron threads (plus the water it was steeping in) and sauté for 1-2 minutes.

  4. Add 2 cups water or veggie broth. Bring to boil, then reduce to a simmer.

  5. Cover and simmer until rice is cooked (about 20 minutes). Add salt & pepper to taste.



Notes

  • Saffron is a very uplifting and energizing herb. So this is great to have when you are feeling down, burnt-out or having low energy.

  • Good for all doshas, just in moderation for kapha as rice in general is heavy.
