SPROUTED MUNG BEAN BREAKFAST

INGREDIENTS

  • 1 1/2 cup sprouted mung beans

  • 1 tbsp ghee

  • 1 tsp digestive spice mix

  • Pinch Chilli flakes

  • 1/4 cup chopped onion or leeks (optional)

  • Freshly squeezed lime juice for topping

  • Fresh cilantro leaves, chopped, for topping

  • Salt and pepper to taste


DIRECTIONS

  1. Heat ghee in medium pan over medium heat.

  2. Add the digestive spice mix. Saute the powdered spices in ghee for no longer than 30 seconds. Add onion/ leeks if using. Saute until translucent (about 5 minutes).

  3. Add the sprouted mung beans and mix with spices.

  4. Add 1 tbsp of water to pan, cover and allow to steam for 2-3 minutes.

  5. Add chili flakes, salt and pepper to taste.

  6. Top with lime and fresh cilantro leaves. Serve warm.



Notes

  • If you want a quick protein packed breakfast that will keep you full for hours while also being easy to digest - this is it.

  • I recommend making a bunch of sprouted mung beans (see recipe) so you can make this fresh on the fly whenever you want it!

  • This is also a great meal topper or addition to any meal, grain bowl, kitchari, or cooked veggies.
