SWEET & SPICY ADZUKI BEANS

Makes 2 cups, 30-40 minutes
INGREDIENTS
1 cup adzuki beans, soaked over night
1/4 tsp turmeric powder
1 tbsp ghee
1/2 tsp garam masala powder
1/2 tsp curry powder or digestive spice mix powder
2 finger pinch cayenne pepper (optional)
3 finger pinch salt (add more to taste)
3 finger pinch black pepper
3 finger pinch cane sugar or coconut sugar
Fresh lime juice for serving
DIRECTIONS
Bring 2 cups water to boil. Add adzuki beans and turmeric and reduce to a simmer. Allow to simmer, covered until beans are tender (about 30 minutes). Drain any excess water at the end of cooking.
Mix all the spices in a medium mixing bowl. Set aside.
Add ghee to medium saucepan over medium heat. Add the adzuki beans and allow to crisp/ brown in the pan, stirring frequently while avoiding breaking the bean (10-15 minutes).
Add adzuki beans to mixing bowl with spices and toss until the beans are coated. Add more spices to taste. Serve warm as part of a grain bowl with steamed greens, veggies and spritz of lime!
Notes
An un-boring bean to add to any grain bowl, wrap, or on the side of cooked veggies. I personally like these or the simple mung beans (see recipe) along side cauliflower steaks or roasted carrots with cumin...YUM.
Adzuki beans are one of the easiest beans to digest and high in nutrients.
They cleanse and build the blood, promote circulation, strengthen the kidneys, promote adrenal function, strengthen the heart, help with obesity and edema. Just an all around great bean that you are probably not used to using - allow me to introduce you to adzuki beans!
Mildly aggravating to vata but, with turmeric added, it helps to de-gas the bean.
