EASY MIXED VEG STIRFRY

4 servings, 30 minutes
INGREDIENTS
1 head of broccoli, chopped into florets
1 medium sweet potato, thinly sliced using a mandolin (or carrots, which might be easier to cut ;))
1 cup kale, chopped, stems removed
1/3 cup chopped nuts (cashews, almonds, pumpkin seeds, or sunflower seeds would taste best here)
Ghee as needed for cooking
Cumin rice or lemon rice for serving (option to serve with cumin cauliflower rice for kapha)
DIRECTIONS
Add the broccoli and sweet potato/ carrots to a pan over medium heat with 2-4 tbsp of water (to steam the veggies). Cover and allow to steam until tender.
Meanwhile, whip-up everything you need for the stir-fry sauce in a small bowl, set aside until ready to use it.
Once veggies are tender, add the kale, cover again (add more water if needed), and allow to steam until bright green (about 2-3 minutes).
Add the chopped nuts and saute until nuts are slightly brown (about 2-3 minutes), adding ghee if needed to prevent burning.
Add the sauce and saute for 1-2 minutes.
Turn off heat and serve with your cooked grain of choice. Enjoy!
Notes
This is basically a no-thought meal. What to make when you are tired but you know you need nourishment - make this. It is steamed veggies with a sauce and a grain. Easy peasy.
We balance out the cooling and warming properties of the ingredients in this meal. Broccoli, sweet potato, kale - all cooling. The sauce and nuts are warming. If you use carrots instead of sweet potato, know that that is also warming.
We also have all 6 tastes in this meal AND balanced heavy and light qualities - carrots/ sweet potatoes, nuts, grain can be heavy, but it balanced by the other veggies and the heat in the sauce.
Overall, it is pretty balanced, but here are some adaptations:
For pittas - go easy on the salt & sour of the sauce, use lime juice in place of any vinegars and go easy on the tamari/ soy sauce. Preferably use sweet potatoes instead of carrots.
For kaphas - use carrots instead of sweet potatoes, sunflower seeds instead of nuts, and cauliflower rice or just a small serving of grain if using. You can also add red-pepper flakes to finish it off for some extra heat.
For vatas - good as is but you could do with less broccoli and use sweet potatoes & carrots instead of one or the other.
