EASY SPELT CRUST PIZZA




INGREDIENTS


Dough

  • 1 1/3 cup spelt flour

  • 1 tsp baking powder

  • 1/2 tsp salt 

  • 2 tbsp avocado oil

  • 6-14 tbsp water


Cashew cream sauce base

  • 1 1/2 cup cashews, soaked overnight 

  • 3/4 cups water

  • juice of 1 lemon

  • juice of 1 lime

  • 2 finger pinch asafoetida powder

  • salt & pepper to taste

  • Fresh herbs such as cilantro & mint optional


Toppings (use whatever veggies are in the fridge. Here is what I prefer:)

  • 1 cup broccoli, chopped into small florets (or any fresh seasonal veggie you have on hand)

  • 1/2 fennel bulb, chopped

  • Fresh arugula

  • Fennel bulb pesto


DIRECTIONS


  1. Preheat oven to 400 degrees Fahrenheit. Mix all the dry ingredients for the dough in a medium mixing bowl. Then add the oil.

  2.  Add the water 1 tbsp at a time, mixing with your hands. Add water until you have a pizza dough consistency. If too dry, add more water. If becoming too wet, stop adding water. 

  3. Knead the dough for about 60 seconds. form into a ball and let rest covered for about 15 minutes.

  4. While the dough is resting, chop the veggies for your toppings, set aside. Make the cashew cream sauce by adding all ingredients to a food processor and blending until smooth (at least 1 min) scraping down the sides as needed. Set aside. 

  5.  Roll the dough on a well-floured surface to a diameter of 12-14 inches. Prick the dough with a fork all over to prevent bubbles from forming. Bake for 10 minutes.

  6.  Spread the cashew crema across the dough. Top with chopped veggies and bake for an additional 15 mins.

  7.  Top with fennel bulb pesto and any remaining cashew crema.



Don't know what kind of spelt flour to use? I use the One Degree Farmers You Know brand. Here is an amazon link. You can also find it at most health food grocery stores like Whole Foods and Sprouts.


Notes

  • I cannot tell you how many times I have made this pizza crust and then put random veggies on it that I needed to get rid of. The crust alone has almost become a go-to when I don't know what else to make. And it can be yours too!

  • You can use any sauce you like as the base, the cashew cream sauce is just a suggested sauce. I usually do a pesto sauce because it is easy. Check out any of the #sauce recipes, the would all work. The herb beet soup could even work as a night-shade free tomato sauce :).

  • You can add cheese to this if you'd like. I recommend adding a good quality fresh cheese like organic fresh mozzarella. If adding cheese, add fresh basil and black pepper to your pizza as that will help digest the diary. If kapha, keep the dairy to a minimum.
