POHA BREAKFAST

4 servings, 15 minutes


INGREDIENTS

  • 1 cup poha

  • ¼ tsp turmeric powder

  • Pinch of salt

  • 1 tbsp ghee

  • 1 tsp mustard seeds

  • ½ cup roasted nuts (almonds, walnuts, coconut whatever you have...use coconut if pitta)

  • ½ cup your choice of chopped seasonal vegetables (optional)

  • ½ cup cilantro, chopped

  • Juice of 1 lime


DIRECTIONS

  1. Rinse the poha under warm water until soft & crumbles to the touch.

  2. Place the poha in a separate bowl with turmeric and salt. Set aside.

  3. Temper the mustard seeds with ghee in medium saucepan over medium heat until mustard seeds start to pop.

  4. Add the nuts and sauté until browned.

  5. Add the seasonal vegetables if using to the pan with 2 tbsp water, cover and allow to steam until soft.

  6. Reduce the heat to low, add the poha, stir to combine, sauté for 1-2 minutes. Top with freshly chopped cilantro and lime juice and serve.



Notes

  • Poha is a steamed and flattened rice...so you actually don't have to cook it...just run it under hot water until the grain is soft.

  • You can get the actual poha grain at any Indian grocery store or you can order an organic brand online.

  • This is a GREAT easy, simple, light, breakfast, lunch, or dinner for pittas. ALSO great in the Summer.

  • Option to add steamed seasonal veggies to your poha - cauliflower, kale, sweet potato, even some sprouted mung beans would be nice :).
