SIMPLE COOKED MUNG BEANS

INGREDIENTS
1 cup mung beans, soaked for 2 hours (if using unsoaked beans, simply cook for longer)
3 cups water
1/4 tsp turmeric powder
Salt & pepper to taste
Fresh lime juice for topping (optional)
DIRECTIONS
Add water to a medium pot and bring to a boil. Add mung beans and turmeric powder.
Cover and reduce to a simmer. Simmer until mung beans are soft (20-30 minutes).
Add salt & pepper to taste at the end of cooking and top with fresh lime juice.
Notes
Make any meal complete with these simple cooked mung beans!
Serve with a #grainsideoption, cooked veggies, cauliflower steaks, in a wrap, or grain bowl as a quick easy meal.
