SIMPLE COOKED MUNG BEANS

INGREDIENTS

  • 1 cup mung beans, soaked for 2 hours (if using unsoaked beans, simply cook for longer)

  • 3 cups water

  • 1/4 tsp turmeric powder

  • Salt & pepper to taste

  • Fresh lime juice for topping (optional)


DIRECTIONS

  1. Add water to a medium pot and bring to a boil. Add mung beans and turmeric powder.

  2. Cover and reduce to a simmer. Simmer until mung beans are soft (20-30 minutes).

  3. Add salt & pepper to taste at the end of cooking and top with fresh lime juice.



Notes

  • Make any meal complete with these simple cooked mung beans!
