CREAMY ASPARAGUS SOUP

4 servings, 20 minutes
INGREDIENTS
1 tbsp ghee
2 cups asparagus, chopped
1 medium sweet potato, peeled and chopped
1 medium white potato, peeled and chopped
1/2 tsp paprika
4 cups veggie broth or water
3/4 cup coconut milk
1/2 - 1 cup fresh basil leaves, chopped (adjust amount to taste)
Salt & pepper to taste
Fresh lemon juice for serving
Olive oil drizzle for serving
Cumin rice for serving
DIRECTIONS
Heat ghee in a large pot over medium heat. Add the asparagus and heat until they have softened (2-3 minutes), stirring occasionally to prevent burning.
Add the sweet potato, white potato, paprika, and veggie broth. Bring to a boil then reduce to a simmer. Allow to simmer covered until veggies are soft (about 12 minutes).
Add the coconut milk and simmer for an additional 2-3 minutes. Remove from heat and allow to cool. Add the basil and transfer to a blender or use an immersion blender to blend into a creamy soup. Taste and adjust salt, pepper, and basil.
Top with an olive oil drizzle and fresh lemon juice. Serve with cooked cumin rice or any #sidegrainoption.

Notes
At the end of summer, the air is getting dryer and dryer. Prolonged heat, always leads to dryness. So we have to bring in something moistening, like a soup, but still keep it cooling with ingredients like asparagus, potato, sweet potato, and coconut milk. This is what we call a "cooling demulcent," which is great for those with inflamed, dry, mucus membranes, which causes conditions like IBS, colitis, constipation, skin issues, irritability, and more.
If avoiding nightshades, just omit the white potato and use just 1 large sweet potato. You can also sub the sattvic spice mix for the paprika.
If Kapha, cook some extra greens into the soup like kale or spinach.
This soup is light enough where you could serve it with a cooked meat like chicken or turkey OR you could keep it vegetarian and have some cumin rice with it. If wanting some extra protein, fresh paneer would go great right on top of the soup when serving.
