CRISPY TERIYAKI CAULIFLOWER WINGS



3-4 servings, 30 minutes


INGREDIENTS


For the cauliflower wings:

  • 1 medium–large head cauliflower, cut into florets

  • 1 cup oat flour (or use sprouted spelt flour if not GF)

  • 3/4 cup water 

  • 1/4 tsp turmeric powder

  • 1 tsp ground coriander powder

  • 3/4 tsp salt

  • 2 1/2 cups panko breadcrumbs (gluten-free or regular)

  • Fresh mint or cilantro, chopped, for serving


Teriyaki sauce:

  • 4 tbsp coconut aminos (or tamari)

  • 2 tbsp maple syrup

  • 2 tsp freshly grated ginger

  • 2 tsp lime juice or apple cider vinegar

  • 4 tsp arrowroot starch + 2 tbsp water (to make a slurry)

DIRECTIONS


  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment.

    • In a large bowl, whisk together:

  2. Oat flour, water, turmeric, coriander, and salt. Mix until smooth and batter-like.

  3. In a separate bowl, pour out panko breadcrumbs.

  4. Dip each cauliflower floret in the batter (or you could just throw them all into the bowl with the batter if you are short on time...thats what I do :)), then coat in panko.

  5. Place on baking sheet lined with parchment paper.

  6. Bake for 25–28 minutes, flipping halfway through, until golden and crisp.

  7. While that is baking, make the teriyaki sauce by mixing the coconut aminos, maple syrup, ginger, lime juice in a small saucepan over medium heat.

  8. Stir together arrowroot + water in a separate small bowl to form a slurry.

  9. Add slurry to saucepan and stir constantly until sauce thickens and turns glossy (1–2 minutes). Remove from heat.

  10. Let wings cool slightly (2–3 min) before pouring the sauce over them. Gently toss with teriyaki sauce, or drizzle over before serving to preserve crispiness.

  11. Garnish with fresh mint or cilantro. Enjoy!


Notes

  • Option to serve this with any #grainsideoption and/or a bed of steamed greens.

  • If you are a meat eater, you can also serve this with a side of meat (something light such as chicken, turkey, or white fish). If kapha and serving with meat, don't serve it with a grain + meat as that would be too heavy. Just meat & cauliflower wings and maybe a steamed green on the side would be great.

  • These would also be great as a lettuce wrap or taco with some fresh chopped herbs, sprouts, and dollop of coconut yogurt YUM!
