RED LENTIL LEMONGRASS CURRY

4-6 servings, 30 minutes
INGREDIENTS
Paste
3 lemongrass stalks, soft inner part chopped (can sub zest of 2 lemons if you do not have lemongrass)
2 tbsp ginger, freshly grated
2 tbsp green onion (sub chopped fennel bulb if sattvic)
1/2 tsp turmeric powder
Zest of 1 whole lime
1 clove garlic (sub 2 finger pinch asafoetida if sattvic)
1-2 tbsp water (for blending)
Curry Sauce
1 tbsp ghee
1 tsp mustard seeds
1 cup red lentils, rinsed
3 cups veggie broth or water
1 tsp sattvic spice mix or curry powder
1 cup chopped kale, stems removed
1 cup coconut milk
1 tsp coconut sugar
Salt & pepper to taste
Fresh lime or lemon juice for serving
Fresh chopped cilantro for serving
Cooked basmati rice or quinoa for serving - goes great with cumin rice (just cook it on the side while the curry is cooking)
DIRECTIONS
Add all the ingredients for the paste in the blender and blend into a paste.
Heat ghee in a medium pot over medium heat
Add mustard seeds and heat until they begin to pop.
Add the paste and saute until aromatic (1-2 minutes)
Add the rinsed lentils, saute for 1-2 minutes, then add the veggie broth.
Add sattvic spice mix and mix together, bring to a boil, then reduce to a simmer for about 20 mins or until lentils are soft.
Add chopped kale, coconut milk, coconut sugar, and salt and pepper to taste. Cook for an additional 3-5 minutes or until kale is wilted.
Serve with a spritz of fresh lime or lemon juice and cilantro. Enjoy!

Floral, easy, light, fragrant good for all doshas, perfect in the late spring/ early summer.
If you are looking for a light meal, this curry is great served on its own. If you are looking for something more satiating you can serve it with cumin rice or any #grainsideoption
Lemongrass is one of my favorite herbs. Especially in the summer time. It is great for digestion, reducing fevers, restoring reproductive tissue, reducing inflammation and heat. If you are ever looking for extra flavor in the summer without heating up your dish too much - look for herbs like lemongrass :).
